A new wave of Italian plant-based meat products

Challenge
Joy Food is the one and only company in Italy producing meat analogues through high-moisture extrusion. When we had the opportunity of doing a project together, this was something to be proud of.
Together with the R&D team of the company we came up with new plant-based meat products with a clean label and very few ingredients, all seasoned with the characteristic Italian taste!
Action plan
NPD iteration and team mentoring
We started the project focused on providing throughout the project all necessary tools to the company for executing product development efficiently.
For this, in the last year we specialised in creating a workflow suitable for remote work so we provided an online working package for proper storage, implementation and recording of all the data related to R&D and NPD.
This enabled the company to work in a more comfortable and complete way, giving technical specifications of raw materials, nutritional labels, formulation handbooks all in one place. All this was done with the aim of providing our deep insights on the design, execution and analysis of the experiments, as well as ensuring supervision along the project.
Along the project, we supported the NPD team of the company on specific projects, one of those was a plant-based fish stick. For these projects, we support the design of the formulation, first by selecting the most suitable ingredients for prototyping and then by helping the company in picking up the best ones to move forward with. Especially, we took into consideration costs and product positioning.
Moreover, we managed part of the R&D activities of the company, mentoring collaborators on general knowledge on food science and technology applied to the development of new plant-based meat analogues.
Once the best prototypes were selected, Developeat also ensured that the scale-up was carried out in the best possible way, supporting the company throughout the upscaling and industrialisation of the recipes, turning it into an industrially viable product.
