Novel Strategies for creamier plant-based dairy products

Challenge
The partnership between Blue Farm (BF) and Time Traveling Milkman (TTM) aimed to develop a creamier plant-based (PB) dairy product that could be used to make foamy cappuccinos. PB dairy products have gained popularity in recent years, but the challenge has been to improve their sensory characteristics, especially creaminess.
As a consultant with expertise in the development of vegan dairy products, Developeat was brought on board to help coordinate the project and obtain the best possible results.
Action plan
NPD & Formulation
To begin with, we decided to get down to work with the formulation and chose to do it with the oat-based ingredients obtained through co-drying by Blue Farm and the sunflower oleosomes of Traveling Milkman; thus combining the maximum potential of both customers by means of the ingredients and characteristics that make them stand out in the market, creating a new and very innovative product.
Co-manufacturer selection and scale-up
Once the product was ready to scale up after a number of development tests and prototypes that allowed us to select the one with the highest market acceptance, we set out to take the next step. The partnership with TTM and BlueFarm allowed us to use their efficient technologies to make this possible. We made sure that the collaboration between the two was very successful and we achieved this thanks to our extensive experience in project coordination. We decided that TTM would take care of ingredient production, while BF would take the step from testing to application.
Key Results
- We successfully created a functional ingredient by combining oat-based ingredients from BF and sunflower oleosomes from TTM through co-spray drying.
- We upscaled the production of the developed ingredient according to the Estimated Annual Volumes (EAVs) outlined in the commercial agreement between BF and TTM.
- We set up the commercial pipeline and began selling the developed ingredient within specific deadlines.
- We conducted regular reviews and alignment of key results (OKRs) for each project phase with both teams to ensure the project progressed as planned and the action plan was aligned to achieve the desired outcomes.
